Dining Experience at Palm Veranda, Palm Fairway Club
As the lazy Saturday afternoon sun began to set, I concluded my schoolwork, feeling a sense of accomplishment and relief. I then received a message from Leilani Dusaban, informing me that she would bring some used papers for our recycling projects. Knowing she would likely suggest getting around the city for some relaxation, I quickly contacted Engiemar Tupas, who often invites me for coffee or dinner after his Saturday classes. Leilani and Engiemar arrived early, and we decided to start our evening by grocery shopping at Landers. By around 7 PM, we had finished shopping and were ready for dinner. Then, we thought of Palm Veranda Restaurant, located within the Palm Fairway Club on Ruins Road, Don Mariano Lacson Street, Talisay, Philippines.
The journey to Palm Veranda was a bit of an adventure, as it lies outside Bacolod City. However, the promise of a unique dining experience kept us motivated. Upon arrival, we were greeted by a guard who informed us that the restaurant was fully booked and that we needed reservations. We were not ones to give up quickly, so we asked if we could at least look around and see if there might be an available table. To our delight, we were told that some customers were finishing up, and we could wait for a few minutes to see if a table had become available. After a brief wait, we were seated and began perusing the menu.
Palm Veranda, Palm Fairway Club: Ambiance and Service
The first thing that struck us was the beautiful ambiance of Palm Veranda. The al fresco dining area offers a stunning golf course view, especially at night when the driving range is well-lit. The contemporary architectural design of the restaurant, including its sleek ceiling, added to its charm. We also noticed an air-conditioned room perfect for group dining or meetings. The weather was pleasant, making the outdoor dining area comfortable and enjoyable. The parking space was spacious, which is always a plus.
The service at Palm Veranda was commendable. Our waiters were pleasant and personable, ensuring our food was served promptly. They were also happy to take photos and even helped us create a video for my social media reels. Their willingness to accommodate our requests made our dining experience even more enjoyable.

We ordered a few dishes to share, including Pork Sisig, Pork Sinigang, and Sinuglaw. The waiter assured us that the servings were generous, and indeed, the pork sinigang arrived in a large bowl, while the sinuglaw looked plentiful. However, our experience with the food was mixed.
The Sinuglaw looked appealing with its ingredients and peanuts, but unfortunately, it lacked the smoky flavor of sinugba and tasted quite bland. We concluded that what was served to us was not a traditional sinuglaw but more akin to a ceviche or kinilaw, as it lacked the grilled flavor we expected. We ended up adding chilies and vinegar to enhance the flavor. While it’s easier to remedy a bland dish than a salty one, we felt that more seasoning would have elevated this dish significantly.
The Pork Sisig was another disappointment. The pork was so finely chopped that it seemed almost like ground pork, lacking the chunky texture one usually expects in a sisig dish. We were looking for chunks of pork that would provide a satisfying bite, but we got a creamy paste. The sisig lacked the grilled, smoky flavor we crave, a hallmark of this popular Filipino dish.
The Pork Sinigang was perhaps the most surprising dish. Upon seeing the generous serving of pork, we were initially excited, but our enthusiasm quickly turned to concern as we realized that about 60-70% of the meat was fat. We jokingly remarked that it was a recipe for a stroke! When we brought this to the waiter, he kindly offered to replace the meat with leaner cuts. While we appreciated the effort, the dish still lacked the usual sinigang flavor, such as the tanginess from batwan. We ended up seasoning it further to enhance the taste.
We also ordered Bangus, served in a good size, but again, we added seasoning to bring out more flavor. It was reassuring to note that all the meats served were fresh, and the vegetables in the sinigang were perfectly cooked. It was just the flavor and taste that fell short of our expectations.

Conclusion and Suggestions
As we concluded our dinner and were leaving, we stopped at the gate to share some feedback with the guard. We suggested that instead of telling potential customers that the restaurant is complete, it would be more beneficial to inform them that they are fully booked but can try their luck. This approach could help avoid missed opportunities for the restaurant. The guard was apologetic and explained that he followed orders, which we understood.
In conclusion, our experience at Palm Veranda was a mixed bag. The ambiance and service were commendable, with the waiters being pleasant and personable. However, incorporating a standard greeting for diners, such as a warm welcome or a brief introduction to the menu, would surely add icing to the cake, enhancing the overall dining experience. The restaurant’s potential is undeniable, but there is room for improvement in the food offerings.
We hope the management will consider reviewing their menu and enhancing the flavors of their dishes. With some refinement, Palm Veranda could become a standout dining destination in Talisay.
Despite the culinary missteps, we left a positive impression of the place. The setting is beautiful, and the staff is friendly and accommodating. We are eager to return in the future, hoping that the food has improved and we can enjoy a more satisfying dining experience. With some tweaks to its menu and perhaps a more flexible approach to handling walk-in customers, Palm Veranda could quickly become a favorite among locals and visitors alike.
